Kerri,You don't have to cure the bacon, even, but if you do, it will be more reminiscent of what you're lpboabry used to. The maple will add a more woody flavor (very yummy), but we don't usually have much maple syrup on hand. You can just fry it up with salt if you like. But we like the brine flavor. I use about 2 parts sugar to 1 part salt (taste the brine to see what you like) with a few shakes of liquid smoke. Dissolve that in warm water and pour it over the bacon in a glass/plastic container. Be sure the meat is totally covered with liquid you can add a little water if necessary. Soak overnight and enjoy as usual in the morning!You don't have to do anything with the sausage except cook it. You can make it into patties or just do it loose (great in scrambled eggs!)I've never tried refreezing a soaked bacon, but I know it refreezes well if you thaw part of the package and throw half of it back into the freezer. Just wrap it well so it doesn't freezer-burn. Hope that helps! Let us know how it turns out!Jerica
